Signature dishes include Pelmeni (meat dumplings), Borscht (Ukrainian soup), Blinis (thick Russian pancakes), game, caviar, and an extensive assortment of vegetarian dishes – Tashkent carrot salad, eggplant Orientale, beet caviar, golubtsy (cabbage rolls).
